RASPBERRY AND PISTACHIO ROCKY ROAD


Rocky Road is the perfect xmas treat and edible gift - plus it literally only takes 10 minutes to make, ideal for those short on time but still wanting to create something delicious. There are so many different filling combinations you can use when making Rocky Road but I really love this white chocolate version adapted from Mama's Pantry.

Ingredients:

- 750g White Chocolate
- 1/2 C Shredded Coconut 
- 1 C Freeze Dried Raspberries (plus a small handful to crush over the top)
- 1/2 C Pistachio kernels (plus a small handful chopped for the top)
- 1/2 C Blanched Almonds
- 1 C Marshmallows

Line a small baking tin (15 x 25cm) with baking paper.
Melt chocolate (in a heatproof bowl over simmering water on the stove or carefully in the microwave) 
Once melted fold through all the other ingredients and pour into the lined baking tin.
Sprinkle with additional raspberries and pistachios and place in the fridge to set.
Once set, cut into chunks and enjoy!
