A few
weeks ago I posted a recipe for white chocolate raspberry and pistachio rocky
road and today have made a similar dark chocolate version that I thought I
would share. We have our family xmas this weekend so I have been baking up a
storm, funnily enough everything I made today is chocolate based - not good in this heat!

Strawberry
and Pistachio Rocky Road
Ingredients:
- 750g
Dark Chocolate
- 1 C
Freeze Dried Strawberries (plus a small handful to crush over the top)
- 1/2 C
Pistachio kernels (plus a small handful chopped for the top)
- 1/2 C
Marshmallows
- 1 C
Turkish Delight – cut into small chunks
Line a
small baking tin (15 x 25cm) with baking paper.
Melt
chocolate (in a heatproof bowl over simmering water on the stove or carefully
in the microwave)
Once
melted fold through all the other ingredients and pour into the lined baking
tin.
Sprinkle
with additional strawberries and pistachios and place in the fridge to set.
Once set,
cut into chunks and enjoy!
