Every year in the lead up to Xmas I seem to start baking regularly. Today I pulled out my recipe book and rediscovered this old favourite - a simple and easy no bake chocolate peppermint slice, it is sooooo good I can't believe I haven't made it in such a long time!
The base is crunchy and the filling is lovely and fluffy, this is one for lovers of all things sweet!
Ingredients:
Base
150g Butter - melted
1/2 C Sugar
4 T Cocoa
2 T Golden syrup
1 t Vanilla essence
1
Packet round wine biscuits - crushed
Filling
(double
for a thicker layer)
100g
Butter, softened
1½ C
Icing Sugar - sifted
2 T Cream
1 t
Peppermint Essence
Chocolate
Topping
300g
Dark chocolate melts
25g Butter -
melted
-Melt
butter, add to cocoa, sugar, golden syrup, vanilla essence and crushed round
wine biscuits in a large bowl and mix well to combine.
-Press
mix into a 20 x 30cm tin (lined with baking paper)
-Place in the
fridge to set.
-To make the
peppermint filling, cream the butter, icing sugar, cream and peppermint essence
until fluffy.
-Spread over
the base and refrigerate until set.
-Cover with
melted chocolate topping.
-Leave the
chocolate to set and then cut into small slices
TIP: you can
add a tiny drop of green food colouring to the peppermint filling
